It all began in 2000 in St. Petersburg, Florida, when two bright men named Tim Curci and Chris Parker founded this store.
They loved fishing, cooking, and serving too. And that passion gave them the courage to start their own seafood grill in Florida.
Unfortunately, the business wasn’t booming, but it wasn’t sinking either. More like it was in a stalemate because both founders refused to compromise on anything they were doing.
And it was great quality food for as low as they can go. That resulted in a lot of customers hovering around and running off with a smaller bill than usual.
Regardless, the tide turned just a year later, when this grill with 3 locations caught the eyes of Bloomin’ Brands, a restaurant holding company specializing in casual dining.
It saw the potential of Bonefish Grill and immediately made the offer to join its family. How can Bonefish Grill say no to that unbelievable offer?
Can you believe that in just five years, Bonefish Grill went from three locations to 100!!! Yes, it’s all real, and the potential was more than Bloomin’ Brands had hoped for.
It blew their minds, and Bonefish Grill opened a dozen more shortly. Tallying its number at 167 corporate owners placed across 28 states.
Bonefish Grill is exclusively a dinner-only restaurant. But there have been rumors of random lunch-hour menus in some places.
