California Pizza Kitchen History
Flax and Rosenfield founded this chain in 1985 in Beverly Hills, California. They leased a big space in Beverly Drive for this.
They loaned $200,000 from the bank and used their own savings along with some help from friends and amassed $350,000 in total.
The general idea was to serve premium-quality California-style pizzas. Premium doesn’t mean expensive, and CPK made sure of it.
The first pizza concept was developed by Edward M. LaDou, III, an American chef known for standardizing California-style pizzas into the mainstream.
The name of that concept was BBQ Chicken Pizza, and you can eat it right now if you wish. The business was a massive success thanks to the quality and quantity of each serving.
No ingredients were frozen, and as they say, anything fresh goes well in your stomach. By 1992, CPK had expanded its horizons to 26 locations.
And then the famous beverage company PepsiCo invested $100M into CPK, reserving 67% of the stake and taking over the management.
The main goal for PepsiCo was to make as much money as possible. A new expansion plan was initiated that heavily relied on opening tens of locations each year.
Everyone knows it won’t be all rain and sunshine if it goes that way. And the expected demise came in 1993, just a year after PepsiCo went crazy.
PepsiCo also forced them to cut corners on quality by including frozen vegetables and cheese instead of fresh. It was reverted soon after by the founders.
Bruckmann, Rosser, Sherrill & Company bought the stakes held by PepsiCo in 1997 to start the public offering.
The new management started the same crazy plan as PepsiCo and failed miserably. Then the current co-CEO and co-chairmen were fired, and Flax & Rosenfield were reappointed.
California Pizza Kitchen Review
The California Pizza Kitchen menu prices are now a bit more expensive since it just recovered from bankruptcy.
Still, that won’t stop us from having a good time. And this good time came in the shape of The Original BBQ Chicken Pizza.
The best way to test its strength is by testing out the very signature meal that made it who it is right now. It was developed in 1985.
Along with their legendary BBQ sauce paired up with smoked Gouda, red onions, and fresh cilantro.
You can swap out the protein with Nueske’s applewood smoked bacon and fresh pineapple. Or even make it a combo by adding both; it’s up to you.
We added Nueske’s applewood smoked bacon instead of regular bacon. We also noticed that the vegetables were crunchy.
Only fresh ones have this type of texture, and that’s one of the best things about it. The crust can also be swapped out for cauliflower or thin.
Go for the latter if all you care about is the center part. Overall, it is a solid menu. The BBQ flavors are popping up pretty hard.
The smoked meat base gives it an enchanting aroma. It’s baked again, so the flavors only enhance more and more.
It’s a genuine masterpiece without a second thought. Next up is Avocado Club Egg Rolls. It is a 15-buck appetizer that takes full advantage of eggs.
The tortola is made with crispy wonton rolls. It is hand-wrapped, giving you an extra layer of love and care.
Then it’s again hand-filled with Monterey Jack, avocado, chicken, tomato, and Nueske’s applewood smoked bacon like the first one we just had.
As for dipping sauce, you’ll get ranchito sauce and herb ranch, two of the best ones they have so far.
