Chevys Fresh Mex History
Warren Simmons found this chain in 1981 on the shores of Alameda, California. It was a great time and an even greater era for expanding restaurants.
Especially Mexican cuisine since TexMex was on the rise, tumbling up Italian dishes as America’s favorites.
The logic behind this chain was to provide much more than just food, and can you guess what that second thing was? It’s fun, obviously.
Every day was filled with unique ways. Kids got to enjoy special dough balls, sundaes, and fajitas that were flamed right on the dining table instead of the kitchen.
Great ideas also require a greater amount of money. Thanks to the demanding qualifications of waiters, wages started going sky-high.
Everything was made daily in the kitchen, which raised the number of kitchen chefs to drastic measures.
And good chefs started asking for wage upgrades since, again, there was no shortcut involved in making the best food.
These slowly gained a lot of popularity; by 1993, Fresh Mex had over 30 locations around California.
But at this point, the business was at its wits end. It suffered everything from being sold, bought, bankrupt, and in between.
The first acquisition happened with Taco Bell, the subsidiary of PepsiCo, by the end of 1993. Then it was bought by J.W. Childs Associates.
Later, under their supervision, Chevys bought another Mexican restaurant named Rio Bravo Cantina.
It was a poorly performing restaurant that closed around 2004. It tried to make a comeback in 2015, only to die again just above the 18-month mark.
Anyway, Chevy Fresh Mex got thrown around left and right and filed its first Chapter 11 bankruptcy in 2003.
More than half of Chevys locations have closed until now. As of today, only 18 locations are standing, and maybe more will fall over time.

Yup, you heard it right—mango and wings at the same time! And yeah, Habanero, too. We got 10 chicken wings with a cup of mango habanero sauce.
It was topped with green onions and house-made ranch dressing. The main highlight of this dish is definitely the sour and tangy white sauce that we got.
It’s so good that you’ll love to dip some fajitas with it! In fact, we did just that with Chicken Fajitas. It was a delightful dish with well-cooked chicken breast.
It was marinated with citrus chile and grilled with mesquite. It was an unusual style, but still, the food was fantastic! And it became divine when we dipped it in the tangy that we got.
Believe me, everyone thought it wouldn’t taste good until they tried it themselves, and man, oh man, it was so good!!!!!!
The fajitas in themselves had a great taste; even without the sauce, you won’t be disappointed a bit. The same goes for the wing; you can pair it up with their self-grounded Salsa.
Spicy, but a worthy experience to have. We also saw that a few tables were reserved for a mini-birthday party.
Everyone was wearing those massive stray hats called sombreros. It’s a Wild West classic if you know what I mean.
