Guy Villavaso and Larry Foles founded this restaurant in 2000 in Austin, Texas. It was a premium place where a lot of known and unknown seafood were made.

Austin is a bustling place for fish of all kinds, and the same goes for saltwater ones as well. The location was good, though, and it grew quite fast.

The location was decorated beautifully with its upscale menu, fine dining experience, V-shaped lounge, and many more.

Over the years, it has attracted a loyal fan base. The story didn’t have any major things to note until it was acquired by Darden Restaurants in 2011.

It was a massive deal of $59 million, and thanks to that, it was quickly placed in Darden’s Specialty Restaurant Group.

This is a privileged position where the management tries extra hard to turn it around. Eddie V’s offered luxurious and highly complicated dishes from the get-go.

So any low-budget staff or untrained chefs wouldn’t do. The new management has already made up their mind to grow it up to double digits.

And with that came many revisions and added benefits, like Level 1 Sommelier Training for every single member.

40% promotion bonus, and a dedicated front and back restaurant structure reserved only for staff. Those special structures offer high-class venues for staff that they can exploit as long as they are on the clock.

It had a big impact on the entire staff, and Darden made sure to boost their morale by donating surplus foods to charitable organizations.

Sometimes a good workplace has less effect than the self-satisfaction of helping someone in need. It boasts more than just morals, and that’s the self-esteem or reputation of being a helping hand.

Fine dining and casual dining have different experiences. So make sure to have a quick look at Eddie V’s menu prices before booking a table or two.

Like the supermassive The Big Eddie. It’s not just a meal for an entire family, but it is also an iconic showstopper from Eddie V’s.

This seafood tower features Jumbo Lump Crab, Fresh Ahi Tuna Poke, Wild Jumbo Gulf Shrimp, Blue Point Oysters, Alaskan King Crab, and Maine Lobster on Ice.

As for beverages, you can expect some of the finest Mignonette, Atomic Horseradish, and Stone Mustard Sauce for more deep flavors.

This one item alone costs more than $100, so be prepared. It includes many complete dishes, as you can expect.

Each dish is masterfully crafted and then decorated on top of each other. The tower is a metal structure with multiple floors. Each floor has something else, and it is carefully placed on top of your dining table.

It’s so big that sometimes staff mess it up by accidentally dropping it along the way. It is heavy, so it takes multiple guys to safely land it on your table.

Regardless, I can say that the way of serving was more fun to watch. It’s like an interesting act that is catered to customers in a fun way.

As for the food, no doubt it’s great. There are a lot of ingredients in each dish, so it’s pointless to explain everything. So let’s just skip that.

I personally liked only Wild Jumbo Gulf Shrimp. I’m not a big fan of the other four. The champagne was great too, and the same goes for the housemade sauce.

I also had a Jumbo Lump Crab Cake. A creamy delight that is again masterfully made and is one of the signature items of Eddie V’s.

Final Thoughts

Most luxurious places go wild on their creations. It’s all about food chemistry, and the chefs are well-educated in that department.

We won’t act like we know everything, but some of those dishes were something else. All dishes won’t make everyone happy.

Every single person has some things that he likes and some that he doesn’t. And the same goes for food, too. The majority seems to love it, so that’s something else too.

Well, it’s time, and we are proud to say that Eddie V’s has earned himself a solid 8.9/10. Fantastic place, definitely on the pricier side, but 100% worth it.

Let’s hope it stays that way. Or, who knows, maybe Eddie V’s will surprise us with something more intriguing soon enough.
