Rax Roast Beef History
Jack Roschman founded this chain in 1967 in Springfield, Ohio. It was then called JAX Roast Beef.
It obviously used the name of the founder, along with the usual words for its specialty dish. Which are sandwiches made with sliced roasted beef.
The corporate drama began in 1969, just 2 years after it was formed. General Foods bought all rights to the chain from Jack and started expanding.
Unfortunately, it failed miserably, only to be taken off by a different corporation. It had 10 locations at that point, and all of those were owned by Restaurant Administration Corporation, or RAC for short.
Just a few years later, RAC again bought all rights to the chain since the current administration would most likely go bankrupt.
JAX name was returned to General Foods. Now RAC only needed to focus on one aspect of the business.
Oh yeah, we didn’t mention that Jax actually had an identity crisis. It claimed to be a fast food store, but it sold casual dining foods too.
Which costs more than fast foods, takes more time to prepare, and requires additional manpower. Overall, the business did not have any clear goal that would separate itself from the rest.
RAC knew that, and that’s why it decided to solely focus on its roasted beef part. The name was changed to TAX, where J was replaced with R from the new owner’s group.
The business was going well. Until then, unfortunately, a commercial was shot. RAC changed the business model again after it started doing crazy well on the market.
Eventually restarting the old issue that destroyed it twice, and now the third one was on its way. And yeah, they tried a lot, but in the end, most locations started crumbling.
Rax Roast Beef Review

Anyway, let’s get started with the all-time favorite potato skins. Or at least that’s what the locals told us. This bad boy goes way beyond any potato sides you may like.
This Rax menu uses freshly baked potatoes for the base. Then they cut it into bite-size pieces before deep-frying it. Toppings can be customized, like cheddar cheese sauce and bacon bits.
We’ll recommend going for the defaults since we don’t know which combo is best. We actually liked the default pick with bacon bites and cheddar cheese sauce.
It’s creamy on the outside, while the bacon sprinkles give it a rich flavor that no potato dish should have.
This is like the French fry version of mashed potatoes. Pretty neat if you ask me. Next up is the classic Regular Rax.
It includes thin slices of tender Rax roast beef in between two seeded Kaiser buns. Mayo and lettuce are free, but they aren’t included in the default combo.
I added tomatoes for extra. It did cost 25 cents, which is not that much. I was looking for onions but couldn’t see one on the list.
Anyways, the beef slices aren’t small or less in quantity. In fact, they added more than 4 slices, which makes it look like a thick boy. It’s rotated, so it has that BBQ kind of vibe to it. Natural saltiness and mayo go well together.
