Romano’s Macaroni Grill History
It was founded by restaurateur Philip J. Romano in Leon Springs, Texas, on April 19, 1988. This location is now counted toward San Antonio.
It was cooked by his nanny when he was little. It wasn’t that big of a motivation for him until he entered the food industry in the 1980s.
His first restaurant concept was Fuddruckers. It was a drive-thru and counter-service-only business. It was also one of 25 concepts that he developed in his 40 years of career.
It was a mixture of Italian and American cuisines in one bowl, and it eventually received the name that we know today.
The original location was later occupied by Burkle’s The Grill. It caught a major fire back in 2021, forcing it to close down indefinitely.
All would think that Romano’s Italian Chain would be as successful as his first one. But unfortunately, that wasn’t the case.
Italian cuisines are tempting, but TexMex is much more crave-worthy than this. Even KFC was rising around the time when Romano’s was around.
Forcing it to suffer major losses in just nine years of operation. Until Brinker International, Inc. came forth as the Savior.
Buying the franchising rights and laying the groundwork for opening 250 stores across the next 15 years.
And it’s the economy. History students will remember how devastating the 1990s recession was.
It managed to survive that, but by 2007, Romano’s Macaroni Grill was in massive debt. Brinker started looking for buyers, and it found one within a year of searching.
Mac Acquisition LLC was the second savior in our story, obtaining the rights to 230 locations of Romano’s Italian concept.
The same cycle repeats itself again and again. Until it was broken by Redrock Partners LLC in 2015. In 2018, Sullivan’s Steakhouse was acquired by Romano’s Macaroni Grill.

For now, let’s focus solely on the dish itself. We started our day with the most famous toast, ravioli.
Each bite is filled with ricotta and comes with marinara dipping sauce. A simple, salty dish perfect for boosting hunger.
In fact, it was good in one way or another. Parmesan Truffle Fries was the other dish that some of our crew decided to order.
I had a few bites, and indeed, it’s good. Probably better than the Ravioli itself. Which one did you like? Let us know in the comments.
As for the fries, they were dusted with parmesan cheese, truffle oil, sea salt, and the signature ketchup that will pop here and there later in the review.
Next up is Spicy Calabrian Mac & Cheese. Why spicy, you may ask? Well, it looks interesting enough, so why not?
Also, it’s a highly recommended dish based on online reviews. It’s a hot one, so be sure to get a bottle of cold water beforehand.
It comes with roasted peppers, Italian sausage, onions, and Calabrian chilies on top of classic Mac & Cheese.
It looks creamy on the outside, and the red chili bites smell strong even from a distance. Well, let’s dig in!
Well, it’s spicy, that’s for sure. But somehow, each bite started having less and less effect. In fact, after five bites, the spiciness almost vanished.
It’s still there, but the flavor of Mac & Cheese has dominated the worst part. Is it bad? Doesn’t that defeat the whole purpose?
Maybe, and yet it’s spicy till the end. Just that it becomes easier to eat over time, creating perfect harmony.

Final Thoughts
Overall, the number of dishes on the board was less than expected. Maybe the Honolulu location is the culprit.
But still, most of the dishes looked the same. The ingredients were different, and it’ll definitely have different flavors.
But the unique and eye-catching were missing for the most part. Well, that shouldn’t matter, as long as the food tastes great.
And it does taste great so that part checks out for now. At its peak, it had around 250 locations, but as of today, it’s limited to just 30.
We also heard more locations may be closed down due to poor sales. At least the quality remained unchanged, which is the main thing. Anyway, Romano’s Macaroni Grill would be on our recommended list until they mess it up themselves.
