Saverio “Sam” Rosati founded Rosati’s Pizza in 1927 at Madison in Chicago West, right around the corner of Pulaski.

This location was closed down due to some unforeseen circumstances. In 1964, it reopened on Mount Prospect.

His motivation behind opening this chain was his father. He was a chef in a New York restaurant all the way back in the 1890s.

He served delicious pizzas to his patronage, which was the driving force behind Sam’s plan to open his own restaurant.

At the beginning of the 20th century, his entire family moved to Chicago, where he learned many local recipes.

Adding his own spice turned it into an outstanding meal. With more appetizers and his homemade ketchup, he rose to serve the superior flavors his family had honed for all these years.

Sam managed the chain for over 30 years until his five sons took over the business. Each opened their own version of Rosati’s, continuing the legacy and keeping the family business alive.

By 78, Rosati’s had 10 family-owned locations. And from next year the franchising began. It was a means to expand the chain into more areas.

At this point, Rosati’s Pizza Concept was more than just food. It has become a local delicacy, with many admirers from afar.

At one point, it was the fourth-largest pizza chain, right behind Pizza Hut, Domino’s, and Little Caesars.

They dropped to 21st in the 2018 ranking of the top 100 pizzerias by Pizza Today. Still, it’s a big achievement for a family business to stay in the rankings for so long.

Next year, the numbers went up, and it ranked in the top 20 of America’s 100 largest pizza chains.

There was a small family dispute in 2006 between Rosati’s Franchise Systems and Frederic Rosati et al. over trademark infringement.

Generation after generation of hard work has evolved Rosati’s pizza menu prices. It’s still a bit on the pricey side, but is it really worth it?

The classic pizza bread was the first thing we ordered. It is one of the few dishes that has remained unchanged since the 1920s.

Choose the toppings you like the most; there are tons of them. I went for onion, and it came with pre-applied ketchup.

Generous portions with 4 servings. Not enough for a meal, that’s for sure. These breads are made to soak up any sauce you throw at them.

And the ketchup, in particular, was the main attraction of this dish. Naturally sweet without any additives, what else can you ask for?

Next up was a vegetarian-deluxe pizza. This time, we went for the vegan special instead of meat. We had a lot of meat just the other day.

And having more now means bye-bye health! Anyway, we went for double dough for the crust and left the selection of ingredients to the professionals.

It came with tomatoes, mushrooms, onions, green peppers, and pizza sauce with mozzarella cheese. All known ingredients so far—nothing extraordinary.

And yet it had a peculiar flavor. The core of the flavor remained unknown until the end. Maybe it’s the taste of one of these local veggies?

We heard that they grow it on their own farmland. Both ways, it’s a good trait; mostly, these veggie pizzas lack the care and love of normal meat ones.

But here at Rosati’s, it is made with proper care, and I’m quite impressed by the overall qualities. The vegetables are quite crunchy—not the thing you’ll expect on a pizza.
