Rubio’s History
Ralph Rubio founded this chain in 1983 at a nearby beach in the Pacific Beach area of San Diego.
One of his young memories inspired this movement that he made. During the spring break at his college, he went on a little vacation to San Felipe, Baja California.
There he experienced the fish taco for the first time, made with Baja fish and fried to a crispy tender.
He was so mesmerized by it that he decided to open a fish taco stand in his hometown, San Diego.
His recipes included Alaskan pollock and Mahi Mahi. More versions are available now. Then he battered, fried, and served the fish taco on a corn tortilla.
Traditional flour tortillas were available too if someone especially asked for them. His initial menu also included fries, calamari, and many TexMex dishes we know today.
There was a lawsuit in 2005 against one of the burrito dishes named “Lobster Burrito.” It was said that it was supposed to use red lobster while using Langostino.
Later, the name of the product was changed to Langostino Lobster Burrito to reduce further confusion.
Although this wasn’t a severe case, it still shows that people don’t back down when it comes to the food they eat.
This item was removed for the most part. And now it’s occasionally served as a time-limited menu.
In 2010, Rubio’s closed its deal with Mill Road Capital, L.P., by merging together and going private.
Each stakeholder received $8.70 per share after this big merger. The brand was at its peak at this point, with over 150 locations across six states.
Amid the COVID lockdown, Rubio said in an interview that Florida and Colorado would be closed down. It was due to poor sales results.
Rubio’s Review
It’s about time we cleared out all of your doubts regarding Rubio’s menu and prices. We’ll mainly focus on the seafood ones.
We started with the elephant in the room, ORIGINAL FISH TACO® TWO TACO PLATE. The classic uses wild-caught Alaska pollock.
Cooked with beer, battered to crispy perfection, and served on corn tortillas with white sauce.
It also comes with mild salsa, cabbage, and two sides of your choice. Just go for the default ones; they are the best ones on the list.
The smell of beer is quite strong. Not that bothersome, but it definitely brings out a unique aroma to it.
The fish is cooked well and fried to the perfect condition that Taco needs. Crispy tortilla with crispy fish—doesn’t that just sound lovely?
Wait! Hold your horse; there’s more! Next up is the WILD-CAUGHT MAHI MAHI BURRITO. As the name says, it uses Mahi Mahi, which I prefer the most.
Apart from that, it comes with creamy chipotle sauce, fresh guacamole, fire-roasted corn, cilantro/onion mix, Mexican rice, cabbage, and tortilla chips.
Generous portions indeed, and the best part is the chewing part. By the way, go for the Blackened Wild-Caught Mahi Mahi instead of the normal grilled.
These burned pieces produce the best flavors you can ever dream of. And fortunately, I did ask to swap out the regular grill ones for this.
Believe it or not, it tastes much better. Chips are ok for what they are; nothing special, just good old potato chips.
The sauce is pretty fine, though; it would be better to sprinkle some over these burritos for a more flavorful boost.
Finally, there was this salted caramel cookie made with all-natural toffee and white chocolate chunks mixed inside crisp bites with a lot of sea salt.

Final Thoughts
Tex-Mex has always been an all-rounder genre for restaurant owners that always pays well. These salty fast foods have a crave-worthy quality to them that no one can resist.
Young or old, there is one kind of dish for everyone. Rubio’s Coastal Grill capitalized on that and eventually made its way into the big league.
Unfortunately, luck wasn’t on his side, and many locations were closed down during the lockdown. As of last year, the numbers were somewhere around 150.
Not too bad considering 200 was the peak performance. For now, Florida and Colorado are devoid of these supreme goods, but who knows? Maybe not for too long.
Overall, Rubio’s has what it takes to make a great impact. Fish tacos aren’t known in the United States, which means they can monopolize these dishes until they reach new heights!
