Schlotzsky’s History
Don and Dolores Dissman founded Schlotzsky’s in 1971. At that time, they had no more funds to start in a fancy location.
Instead, they used the traditional hole-in-the-wall method, and yeah, that’s exactly how it sounds. It was a relatively efficient way of selling fast food at the time.
Anyhow, they introduced their very first dish called “The Original,” which was inspired by the sandwich.
This particular type was brought to America by Italian immigrants. It came in the form of fast food, making the cooking and selling process rather quick.
The concept was unusual and new, and probably that’s why business started booming the very next day.
Schlotzsky’s saw rapid growth and decided to franchise their brand. Then 10 locations were opened every year, bringing it to around 100 by 1981.
The following year, three real estate investors called John and Jeff Wooley, along with Gary Bradley, bought the entire chain for less than 3 million dollars.
Soon after, Gary used this opportunity to split himself from the three-man partnership and start solely focusing on the real estate business.
While the two brothers kept the chain and kept on managing it, they added new dishes, such as pizza, to the list and expanded it over 700 years by 2001.
Unfortunately, this rapid expansion did not sustain the business, causing huge losses. In 2004, Schlotzsky’s filed for Chapter 11 protection for bankruptcy.
The following year, Bobby Cox Companies acquired Schlotzsky’s. The new administration focused on strengthening the flaws.
But ultimately, it didn’t work, and then in 2006, Focus Brands was acquired for the last time, ending the cycle of ups and downs.
William Armstrong is the acting president for the time being and somehow managed to set things stable. Kelly Roddy was the president after the acquisition.
Schlotzsky’s Review
Since it’s a fast food chain, Schlotzsky’s menu and prices will not feel on the high side. Except for larger portions, which is acceptable.
We hopped to taste their Original Sandwich, but how can we say no to a Fiesta Chicken? This mouthwatering dish looked so good that we just had to order it.
It came in four portion options: small, medium, giant, and wrap. Yup, you can even ask for a wrap-style Fiesta chicken.
We went with Medium since our plan was to try one more item before saying goodbye. And man, oh man, this juicy chicken was something else.
The sourdough bun was filled with roasted red peppers, lettuce, red and green onions, and tomatoes. The cherry on top was cheddar cheese, olives, and chipotle mayo.
It was truly a fiesta, or feast, for our taste buds. It was salty, a bit oily, and sweet in some parts. Meanwhile, the bun and veggies have a crunchy texture.
Overall, this is probably the best one you can get. We don’t know how good or bad others are, but we give a massive thumbs-up to this one.
Schlotzsky’s Chips are also good, or at least that’s what we heard. So it was time to bake some regular chips.
It’s not overwhelming, that’s for sure; the flavor and texture are balanced well. And then suddenly, we saw a weird thing that looked like a cupcake.
We asked a few people, and then we found out that it was called a Cinnabon. Anyway, it had four kinds of things in it; we went for one called Classic.
It was made with warm dough along with their legendary Makara® cinnamon.
After removing it from the oven, it was topped with a rich cream cheese frosting. They called it Ooey-Gooey.

Final Thoughts
Cinnabon was the winner of this trip. It had an unusual and surprising element to it. But remember that this is not a dessert, despite its look and taste.
Schlotzsky’s has seen both good and bad days during its lifetime. COVID-19 surely broke its neck like everyone else.
It brought its sales to the ground, but still, the new administration managed to set things up. Once, they had almost 900 locations, but now they’re limited to 330.
Most locations are permanently closed and sold off to pay off the debt. Meanwhile, some are in the process of being reopened, with new things on the list.
We just hope that Schlotzsky’s menu keeps growing and adds more dishes. We hope to see more unique dishes, just like the Cinnabon.
