Uno Chicago Grill History
Ike Sewell, a former University of Texas football star, always wanted to start a business of his own. This became a reality when he met his best friend right after his graduation.
The name of his friend was Ric Riccardo, a former World War II G.I. Originally, Sewell wanted to make a Mexican restaurant.
Because at the time, there weren’t many Tex-Mex kinds of restaurants around his hometown. This was a big decision since he could only try it once.
So he abandoned his dream for the time being and went with one of the most popular Italian dishes of the time, pizzas.
Both friends opened their first restaurant in 1943 and named it Uno’s. The first few years were pretty rough since the world was still recovering from the devastation of World War 3.
But everything changed after 1950; their popularity just skyrocketed, and thanks to that, Sewell decided to open two more restaurants.
The first one followed the same route as Uno’s, and he named it Pizzeria Due. Meanwhile, the second restaurant was the creation of his dream which served Mexican food.
He named it Su Casa. Due opened in 1955, while his Mexican restaurant opened 10 years later.
However, the franchising wouldn’t begin until 1978, when Sewell franchised Uno and called it Uno Restaurant Holdings Corporation.
Franchising began two years after that, and by 2017, Uno’s had over 100 active locations. But COVID greatly impacted their overall sales, like everyone else.
This resulted in closing down over 30 locations to cover for the loss of a year-long lockdown. After the death of Sewell in 1990, the first three locations were sold off to the Boston-based main franchise.
The acting CEO, Aaron Spencer, promised not to touch the original locations to commemorate their founder. The same goes for the pizzas they made.

It’s time to learn all about the Uno Chicago Grill menu and prices. While the classic aim was to provide pizzas, over the years, their menu grew and offered more things.
Like now, we have tons of beverages, but that wasn’t the case back in the day. Anyway, we quickly looked at the Uno Chicago Grill menu and prices, and then we noticed some interesting options.
We saw tons of appetizers, which was unusual for a pizzeria restaurant. Anyway, there was a lot to choose from, and in the end, we ended up with PIZZA SKINS®.
It had UNO’s signature deep-dish pizza crust filled with mashed red bliss potatoes and then topped with bacon and cheddar.
It was truly the best appetizer on the list, which was both light on the surface and left us craving the main dish.
And that main dish was none other than New York Deli, which is a unique style that includes meat, pickles, bread, etc. giving it an authentic texture.
Most Americans know it by now because, in most cases, your parents would’ve made it during your childhood.
So it had the perfect combination of an Italian sub in our deep dish crust! A deli-style recipe that included mozzarella, provolone, ham, onions, plum tomatoes, and banana peppers.
Top it all up; it was sprinkled with oregano and romano. Lastly, we also had a side of their house-made vinaigrette.
Well, let’s say you are a vegan, so you can’t have meat in your dish. So Uno Chicago Grill menu added a counter dish for those kinds of people.
It’s called Farmer’s Market, and it has caramelized onions, fresh spinach, roasted eggplant, sun-dried and plum tomatoes, pesto, feta, mozzarella, and imported pecorino romano.
