It was founded in 1999 by George Pallotta in The Woodlands, Texas. There isn’t much information available publicly about its early days.

But we can speculate on a few things right off the bat. For example, the slow start, which is a common thing for cafés of this sort.

It promised to offer a wide variety of breakfast dishes, but we can argue that the current menu is too good to be true. And there’s no way that the first locations had all this from day one.

The breakfast dishes were really unique. Some are familiar, like enchiladas. But come on, you know we won’t ever eat the simple ones.
