Boston Market History
It was founded by two gentlemen, Steven Kolow and Arthur Cores. They did it around 1985 in Newton, a suburban area of Boston.
It was originally known as Boston Chicken, and there’s a big reason for that. At first, those two gentlemen thought of selling only their specialized rotisserie chicken.
But as time progressed, more and more people started asking for newer alternatives. Side dishes like cornbread, dessert options like cookies, and a lot more things were added slowly.
The biggest change came in February of 1995, when the company decided to use its exclusive technique on meatloafs, ham, and turkey.
At this point, Boston Chicken was no longer a chicken-exclusive restaurant. Now it has everything that any ordinary restaurant has, from prime ribs to end meals like sweets and drinks.
Then Bost founders finally agreed on renaming the second part of their brand from Chicken to Market, which accurately explains what their business is all about.
The rotisserie way stayed the same, even making the ordinary ribs into a fine cuisine that only Boston Market can offer.
In the same year, Boston Market acquired a lot of small restaurants. These would later end up becoming Einstein Bros. Bagels, a chain of bakery cafes.
In the following years, a new line of sandwiches would see the day of light: “Boston Carver Sandwiches.”.
It became an instant hit, so the company decided to launch a larger portion option in the next year with more meat and veggies.
Both lineups were successful, and as a result, Boston Market levied heavy interest and royalty fees on its franchisors.

We went for a smoke; it tasted great, so obviously we will go for that. The chicken was masterfully crafted with a blend of garlic, herbs, and spices.
Get two homestyle sides and fresh-baked cornbread as a bonus. Just get a creamed spinach and sweet potato casserole; just believe me, it tastes heavenly.
The chicken was perfectly smoked and tender, and the outside sauce made it crispy to the core. These all-white goodies are definitely the highlight of today’s show.
Classic flavors can be a bit overwhelming, so be ready for that. Next up was another specialty dish called Whole Meatloaf.
The dark-colored meatloaf is made with in-house special seasonings, tomato puree, onions, and toasted breadcrumbs.
We got the same BBQ sauce as the chicken dish that we had: hickory-smoked BBQ sauce. Skip the poultry gravy and indulge in the meatloaves.
Flavors exploded right when the meat touched our tongue. The sauce was just perfect, and the meatloafs were cooked so well that we didn’t even need to chew that much.
Just a few bites and it went all in. Crispy on the outside and juicy on the inside—a perfect combo song, you think?
The Boston Market menu also had a few baked desserts, as expected. Indulgent chocolate brownies were by far the best of all.
