Stacy Brown, the founder and a single mother of three children, faced devastating news in 2006. Her marriage met its end, and she was divorced.

She has always been a great housewife, and as a result, she never thought of working outside. Her husband provided for the most part, and the marriage lasted for about 10 years.

Nobody thought this could go south. And that’s where our story begins. After her divorce, she returned to Auburn, Alabama.

She needed to support her kids, and with little to no skill outside the kitchen, she had no choice but to sell homemade food.

Thankfully, the neighborhood in Auburn wasn’t that bad. They accepted her homemade meal and even gave her a tip whenever they could.

But soon a law was passed that forbade selling cooked meals from home. It came as a big shock, but Stacy could back down at this point.

She learned how to make great food that people liked. Learning a new skill at this age will affect not only her but her kids too.

So with the help of Kevin Brown, she opened her first restaurant in 2008. Also, if you don’t know, that same fella later became her future husband.

Home-cooked meals are far different from restaurant foods. Because they hold a story behind each ingredient. Alabama was home to many recipes like this.

The same goes for her family’s chicken salad, which wasn’t developed overnight. It took months until it was finalized.

And in the end, she said, “This is My Story.” Her long struggle, second marriage, and finding happiness all over again became a cornerstone for the future.

Our journey took us to Prattville, where we experienced the classic salad in its full glory. It stayed more or less the same since 2008.

It includes a massive bed of their spring lettuce blend, fresh grape tomatoes, and cucumber, along with a protein scoop of your choice in the middle.

This scoop is the real king and can challenge your taste buds all day long. We went for Lauryn’s lemon basil scoop with honey mustard dressing.

Sour, sweet, and spice all on one plate. Well, salads are supposed to be bland, right? At least that’s not the case in Chicken Salad Chick.

Yeah, the vegetation looks bland as always. We can’t deny that. But the scoop definitely changed the mood for good.

The lemon basil combo has the flavor that salads mostly lack. Meanwhile, the veggies can be wrapped around each bite for a more rich flavor.

Overall, it’s an unexpected twist, and I love it. Next up is Grape Salad. You can also get a sandwich and fresh fruit, so make it a combo like I did just now.

Grape Salad with Turkey Club. But let’s focus on the Grape one for now. It uses red and white seedless grapes, sliced and covered in a sweet cream cheese mixture.

As for the topping, you’ll get brown sugar and crushed pecans. And I have to say, this truly feels like a dessert of salads!

The grapes are moderately sweet, and the brown sugar, as we know, always had far less sweetness than refined ones.

So in the end, you’ll have a smooth texture that has more of a pie kind of sweetness that doesn’t overwhelm a bit.
