Joe Dion, a Michigan native, came to Los Angeles in the hope of a better future. He only had a few pennies and an unfinished recipe.
He got that recipe from a chef from New Orleans who goes by Paul Prudhomme. It was an experimental dish that needed months and months of additional hard work.
Paul just showed him one of many scratches from his recipe book, and one made Joe curious. He remembered just about it, and he immediately started his experiment in his family carport.
Meanwhile, his expertise landed him a solid job at Jack-in-the-Box and eventually in the Pioneer Chicken franchises.
