Qdoba History
This chain was founded by Anthony Miller and partner Robert Hauser in 1995 at Grant Street and Sixth Avenue in Denver.
The original location is still operational to this day, and it was back then known as Zuma Fresh Mexican Grill.
The two founders first met in New York when Miller was working as a banker at Merrill. While Robert was working at the famous Le Cirque.
Robert developed all the recipes and tweaked them to use less animal fat. He replaced those with green vegetables, which definitely increased the food quality at the cost of a longer serving time.
It took about 7 minutes to serve 30 lines. Usually, it’s less, but the benefits outweigh a few more minutes of waiting time.
Zuma became an instant hit; each dish had generous portions, and since vegetables cost less, they were able to minimize the price of each item to a minimum.
In short, a smaller amount for double the benefit and a huge portion that defies all means—who wouldn’t want that?
The first location was made in a 1,300-square-foot space and cost around $180,000. But in the first year, revenue far exceeded that and crossed $1,500,000.
In 1997, the name was changed to Z-Tech due to some lawsuits by a Boston-based company with the same name and other small chains that had similar-sounding names like ZuZu.
Later that year, Z-Tech started offering franchising opportunities to expand beyond the Colorado area.
Another trademark lawsuit happened two years later, and this was the time when Qdoba was incorporated for the final time.
At this point, Qdoba had more than 50 locations, triple the size of its first plot. And chicken burritos only cost $4.79 in their stores.
Qdoba Review
Now we’ll clear up most of your doubts regarding the Qdoba menu and prices. It’s evolved a lot—I mean, a lot—and you’ll be surprised by what we have seen.
The first one is this tiny appetizer called Mexican Street Corn. A 3-dollar dish that doesn’t try to be fancy but still manages to be flashy enough to catch our attention.
It comes with a blend of warm corn and elote sauce, cotija cheese, chile crema, and chopped cilantro.
That’s quite a lot of ingredients for a 3-to-4-dollar item. Anyway, it’s boiled sweet corn, so it tastes as sweet as expected.
Other ingredients make it a bit salty, which is the sweet spot for all sweet corn on this planet. Well, salt goes well with anything, so that’s kind of hypocritical!
Anyway, let’s move on to our next subject, and it’s called Citrus Lime Shrimp Burrito. A beautiful, mouthwatering dish that begs you to eat!
These citrus-lime shrimp with freshly sauteed chile crema just look so lovely. But that’s not all; it also has cilantro lime rice, pico de gallo, cotija cheese, and black beans.
Wrapped in a warm tortilla that barely keeps things together. So don’t wait until this thing gets in your hand! Just start biting, or it may fall over.
And yeah, it’s real; there’s no doubt about it. This dish looks and tastes exactly as you’d expect—just heavenly!
Especially this shrimp, which is made with citrus and like, has a sour taste that overwhelms everything, and suddenly other ingredients pour their juice and turn it into bliss like never before.
The only thing left that my stomach can endure at this point is a mini chocolate chunk cookie. A dry delight perfect for cleansing the soul of the greatness Qdoba has offered us.
