Jeff Sinelli founded Genghis Grill in 1988. He’s best known for his other restaurant firm, Which Wich Superior Sandwiches.

He founded both of them, but the sandwich business boomed like crazy. The concept was different, and it’s a given that fast food tends to sell more overall.

Still, Genghis Grill wasn’t suffering from any angle. Since day one, a big crowd has been covered until the door closes.

Usually, people complain about serving time. But here, those same people can take all their time picking ingredients from the 80+ available options.

The grill master then uses those same items to prepare their dream meal. Along with a pinch of seasoning and special sauces that turn these ingredients into fine Genghis cuisine.

The Chalak Group of Companies bought the concept in 2004 and started the rapid expansion. Which was founded a year before that, which explains the decision.

At its peak, it had 70 locations, and the project plans to open 30 more by 2011. It was later acquired by Craveworthy Brands.

It probably happened between 2011 and 2024, since we have zero information about when it happened and what the reason behind it was.

It happened in secrecy, so there should be some kind of NDA thing going on. Anyway, it’s still fair since the restaurants are open to this day.

Bringing new concepts day by day. Like the Make Your Bowl concept that was introduced in June 2022. Sane stuff as the grill, except now you can fill it in a bowl with some twists.

Some outlets were redesigned to make more room for off-premises business. Takeouts started becoming popular, and in this online ordering era, it makes no sense to have a large dining hall that would be empty most of the time.

We started with an appetizer called Teriyaki Quesadilla. Good old flour tortillas filled with Japanese-style meat.

Teriyaki refers to a kind of meat that is prepared in a way that makes it shiny. That’s why the fillings in this dish kind of shine bright yellow.

The main base is a mixture of teriyaki chicken, roasted peppers, and cheese inside a grilled flour tortilla.

It is served with a house-made chili-crisp ranch that looks white in nature but tastes quite fantastic.

We actually tried some teriyaki chicken just a few days ago. I liked the old one, and it also tastes great so far.

The balanced flavor and texture had a similar feeling. Even the main meals are all inspired by rice bowls from Japan.

The one that got me was orange chicken. Have you ever imagined marinating chicken in orange? I never did, but these guys somehow made it work.

It was an experimental dish from last year that has been added to the menu after countless public demands.

It uses the classic fried chicken marinated in Zesty Mandarin Orange Sauce for that superb citrus flavor. Plus, it’s ripped orange, so it’ll have a natural sweet flavor from top to bottom.

Served with green onions and mandarin oranges with white rice at the bottom. Classic Japanese Meat Bowl, no doubt about that.

As far as taste and flavor go, it’s rocking good! The citric acid just made the meat taste better.

It’s used in a Japanese style, so the rice is half soaked with the fatty juice of meat, mandarine, and the refreshing aroma of onions.

Genghis Grill has pretty much everything covered. I was still looking for the old-style, pick-and-eat system. Still, it’s an okay experience with some of the best hand-picked dishes of all.

The peak period is over, the business model has changed, and the current Genghis Grill is an entirely different chain.

Not all people will love that, but remember that time changes everything. They probably did this to survive, and we respect that.

The best part is the food, which has changed drastically over the years. The menu is smaller, but it’s better and stronger, which forces us to give them 9.5/10 in one go.
